This is one of the best coffees I have tasted this year. Thank you Carlos De Quintanill! It is pure 100% high grown Bourbon that was honey processed. The processing, the varietal, the weather and the soil all came together in a wonderful combination to produce a very unique orange citrus flavored coffee.
During the honey process, the coffee cherry is pulped (squeezed) until the seed comes out. The seed is covered in sticky clear juice called mucilage. Most coffees are now washed and fermented for a time in a tank filled with water, but with honey process the mucilage is left on during drying. It turns golden and thus the name "honey" has been given to this process. Honey processed coffees tend to have a wine flavor and less acidity than washed coffees but this El Nazareno has kept a nice tart acidity, and a light mouth feel that I really like.
Delicate, complex, refreshing. Flavor-saturated aroma, balanced structure. Flowers, butterscotch, roasted cacao nib and an intriguing note suggesting rye whisky in aroma and cup. Smooth acidity; silky mouthfeel. Rich, flavor-nuanced finish.
